2011 Kentucky Derby and Derby Pie Recipe (My Version)

Tomorrow it the 2011 Kentucky Derby. You would think I am this huge fan of the Derby. Not so much. I’ve lived in Louisville all my life and have never once been to the Derby. I’ve been to watch races at Churchill Downs, but never the Derby itself. Maybe one day…
But in honor of this much celebrated event I am giving my version of the infamous recipe of The Derby Pie.

Derby Pie (My Version)

1/2 cup butter, melted and cooled
2 eggs
1 cup of sugar
1/2 cup of flour
3/4 cup of chocolate chips
1 cup chopped pecans
1 tbs bourbon

Beat together eggs and butter. Add the flour and sugar. Beat until well mixed.
Stir in chocolate chips, pecans and bourbon.
Pour into a uncooked pie shell. Bake at 350 for 30 minutes.
