Chocolate-Peanut Butter Sheet Cake

Today is day 1 of 365 Easy Recipes and I fixed Chocolate-Peanut Butter Sheet Cake. For those of you  who know me, or have been reading this blog for any length of time, you know that I am a fan of chocolate. I am a huge fan of chocolate. In fact, I’m such a fan of chocolate that sometimes I even get tired of it…but not for long.

Nothing out of the ordinary happened while making this cake. Oh wait, actually there was something. The recipe calls for sour cream, one of the reasons the cake is so moist. I thought I had sour cream in the fridge, so I began preparing the cake. While the one mixture was cooking, well that’s when I realized the sour cream was actually cottage cheese, cottage cheese that had gone bad. The up side of having adult kids still living with us is that I can send them to the store in an emergency and this was an emergency! No harm, no foul I suppose. The cake turned out just fine. The proof? The cake was eaten in just a couple of days!

Chocolate-Peanut Butter Sheet Cake

2 cups all-purpose flour

2 cups sugar

1 tsp. baking soda

1/2 tsp. salt

1 cup water

1/2 cup butter, cubed

1/2 cup creamy peanut butter

1/4 cup baking cocoa

3 eggs

1/2 cup sour cream

2 tsp. vanilla extract

Frosting

3 cups confectioners’ sugar

1/2 cup creamy peanut butter

1/2 cup 2% milk

1/2 tsp. vanilla extract

1/2 cup chopped peanuts

1. Preheat over to 350º. Grease a 13×9 in. baking pan

2. In a large bowl, whisk flour, sugar, baking soda and salt. In a small saucepan, combine water, butter, peanut butter and cocoa; bring just to a boil, stirring occasionally. Add to flour mixture, stirring just until moistened.

3. In a small bowl, whisk eggs, sour cream and vanilla until blended; add to flour mixture, whisking constantly. Transfer to prepared pan. Bake 25-30 minutes or until a toothpick inserted in center comes out clean.

4. Prepare frosting while cake is baking. In a large bowl, beat the confectioners’ sugar, peanut butter, milk and vanilla until smooth.

5. Remove cake from over; place on a wire rack. Immediately spread with frosting; sprinkle with peanuts. Cool completely.

That’s it! Pretty easy for a make-from-scratch cake. Let me know how you like it!
