I filled the cookie jar again, this time with peanut butter cup cookies. My family really likes peanut butter. Add chocolate to that and it’s a winning combination so this is definitely the cookie for us.
I just so happened to find some Reese’s Miniature Peanut Butter Cups™ that was pushed way back in the pantry so I decided to see what I could come up with. I have Taste of Home’s The Ultimate Cookie Collection cookbook and found the recipe there.

Peanut Butter Cup Cookies
1 cup butter, softened
2/3 cup peanut butter
1 cup sugar
1 cup packed brown sugar
2 eggs
2 teaspoons vanilla extract
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 cups (12 ounces) semisweet chocolate chips
2 cups chopped peanut butter cups (about six 1.6-ounce packages)
1. In a large mixing bowl, cream butter, peanut butter and sugars. Add eggs, one at a time, beating well after each addition. Beat in vanilla. combine four, baking soda and salt; gradually add to the creamed mixture. Stir in the chocolate chips and peanut butter cups.
2. Drop by rounded tablespoonful 2 in. apart onto ungreased baking sheets. Bake at 350º for 10-12 minutes or until edges are lightly browned. Cool for 2 minutes before removing to wire racks.
Yield: 7 1/2 dozen

We love almost anything with peanut butter and chocolate and I know these would be a hit in our house. Just need to get the peanut butter cups.
