I am baking cookies . I do love to bake. It’s the eating that is the problem. Not that I don’t like to eat, it’s the calories and the sugar, and all the “bad” stuff that tastes so good that’s the REAL problem.
We are off on another hiking venture, meeting another family for a little more outdoor Fall enjoyment, ending with a bonfire at their house afterwards. My job: bring cookies. Can do!
I made a family favorite. Both sons lay claim to these cookies as being their favorite. I got the recipe off of the back of Nestles Tollhouse Semi-sweet Chocolate Morsels bag years ago. I’ve been baking them ever since.
I oftentimes make a half of a recipe which is just enough for the family. Unfortunately, however, I only have a half of a bag of these Hershey’s Premier White Chips left, which means I have to make a different kind of cookie to take tomorrow. Darn! 🙂
Here is the recipe:
Toll House® White Chip Chocolate Cookies
Ingredients
1 1/4 cups all-purpose flour
2/3 cup Nestle® Toll House® Baking Cocoa ( I use any brand)
1 teaspoon baking soda
1/4 teaspoon salt (I omit)
1 cup butter or margarine, softened
3/4 cup granulated sugar
2/3 cup packed brown sugar
2 large eggs
1 (12 ounce) package Nestle® Toll House® Premier White Morsels (I use any brand)
Directions
1. Preheat oven to 350° F.
2. Combine flour, cocoa, baking soda and salt in small bowl. Beat butter, sugars and vanilla extract in large mixer bowl until creamy. Beat in eggs, Gradually beat in flour mixture. Stir in morsels. Drop by well-rounded teaspoon onto ungreased bakng sheets.
3. Bake for 9-11 (I bake for 8 minutes for softer cookie) or until centers are set. cool on baking sheets for 2 minutes; remove to wire racks to cool completely.
I was going to go all out and try a new cookie I just read about, a risky cookie from the sound of it. It is called: Candied Bacon and Bourbon Chocolate Chip Cookies. I got the recipe from Tidy Mom.
I didn’t have bacon in the house so I texted my son to bring some home while he was out. Check. I do have bourbon in the house (for baking, okay?). Check. What I don’t have, and what is called for, is both cake flour AND bread flour. Really?! I just have all-purpose, and didn’t want the cookies to be a flop so…..I’m making another favorite.
I always get requests for this recipe. I always conveniently “forget” to give it out. It’s like my trademark cookie, you know? I got this recipe many years ago from Taste of Home Magazine. I have tweaked it and made it my own.
Slice and Bake Cookies
Ingredients
1/2 cup, softened
1/2 cup shortening
3/4 packed brown sugar
3/4 cup granulated sugar
2 eggs
1 teaspoon vanilla
2 1/4 cups app-purpose flour
1 teaspoon salt (I omit)
1 teaspoon baking soda
1 cup chocolate chips or anything other mix-in you desire
Directions
In a mixing bowl, bream shortening and butter; then add sugars. Cream well. Add eggs and vanilla. Combine flour, salt and baking soda. Add to creamed mixture and mix well. fold in chips (or other mix-ins). Shape into a roll and wrap tightly in plastic wrap. Chill for 2 hours or up to one week. To bake, cut into 1/2 inch slices. Place 3 inches apart. Put M & M’s® on top of each cookie. Bake at 350º for 10 minutes. Cool 5 minutes on baking sheet. remove to wire racks until completely cool. Makes 2 1/2 dozen.
